HEALTHY ICE CREAM?

Eating healthy is far more than just counting calories. It's counting the makeup of those calories. 100 calories of sugar has a very different impact on your body than 100 calories of healthy fats.

We believe the healthiest diet is one high in healthy fats, moderate in protein, and very low in sugar. Rebel uses only premium, high quality ingredients that are keto-friendly. All ingredients are very low glycemic and will not kick you out of a fat-burning state. We sweeten our products with natural sweeteners that don't raise your blood sugar or upset your stomach.

But Rebel Ice Cream isn't like other "healthy" ice creams. The high fat content gives it the creamy texture of real ice cream. In other words, this is real ice cream without any of the sugar!* However, since there is no sugar, it is best to let the ice cream soften for 10-15 minutes before you eat it.

Grateful for this product!

My daughter was recently diagnosed with epilepsy as a result of a brain tumor that was found after her 1st seizure. We are heartbroken but super grateful she can enjoy a treat like this safely. When she eats sugar the inflammation in tumor causes terrible symptoms and this ice cream seems to be safe for her! Thank you for making it!

SO nice for a recent stay-at-home senior!!!

I just turned 70 and sight issues keep me from driving to the store. Diabetes issues keep me from enjoying easy-to-get regular ice cream. I had tried your triple chocolate in the past and loved it -- the flavor, the feel in my mouth and the diabetic-friendly ingredients. When I saw your offer to ship to my home I couldn't resist. I tried The Maverick sample box. It arrived on time, still frozen hard in dry ice. I'm not a fanatic about sweets, but it's WONDERFUL to know can have amazing choices available in my freezer whenever I do want it. And great to know I can serve it to my non-diabetic friends with out worrying.

"Overrun" is a major Industry issue with all but Quality Gelato

The taste, quality and flavors are fine. I have emailed to you previously suggesting flavors (Peach Melba; Strawberry-Banana; Mixed Berry; Coffee Royale-Melba) and commenting on the conspicuous ABSENCE of ANY solid sign of fruit (not even seeds) in the Black Raspberry and Strawberry -- suggesting strongly these are just flavored syrups as DaVinci or Torani (please correct me if I'm wrong).

In the Ice Cream Industry generally, across ALL Brands, the OVERRUN (though X% legal) has got way, way, way out-of-hand. These "pint" containers are at best 10 fl.oz. -- nowhere near a legal U.S. 16 fl.oz. pint. Once in the freezer for 48 hrs. having defrost-recycled several times, what remains once opened is little more than 8-9 fl.oz. -- in essence a HALF "pint."

We both know this; so let's not kid each other.

All this is doing, slowly but steadily, is pushing more and more smart consumers to do with ice cream as we've done with pizza stones; make all these things ourselves at home; zero cheating, better quality, cheaper, easier, quicker, no 'games'!

Be smart: Don't (as Dad used to caution) "cut off your nose to spite your face." In the end, the smart consumer ALWAYS wins. We ALWAYS 'find a way'!

I will recommend Rebel with the Caveat Emptor outlined above.

Rebel Ice Cream

Thanks for your review! We are actually using real fruit in the Strawberry, Black Raspberry, and Cherry Chip, but it is fully pureed since in the absence of sugar, leaving any chunks causes them to be very icy. Now, we are adding some additional flavors (strawberry, black raspberry, and cherry) to enhance the fruits. After you pasteurize the fruity purees (required in the supply chain process to activate a "kill step" for any potential bacteria), the flavor of the fruits is muted, and without real sugar, they are not enough by themselves to provide that flavor. But we are using a LOT of fruit in these flavors. They are our most expensive flavors because of how much real fruit is in there. As for the not seeing seeds, we are using seedless black raspberries (it was slightly cheaper than seeded with no difference in quality/taste), and you should see some seeds in the strawberry.

Next, for overrun. When we first started creating the ice cream, the objective was to get the full fat experience of superpremium ice cream, just without the sugar. This is the highest butterfat ice cream on the market, even well above Ben & Jerry's and Häagen-Dazs. This is both a huge plus as well as a challenge. We tried other formulations that were even higher in butterfat, and they left a bit of a greasy or fatty residue on the tongue. Higher butterfat also makes it harder to scoop, or longer to soften. There is a fine balance here between decreasing fat and increasing overrun (the amount of air incorporated to anyone else reading this), all of which will impact texture and mouthfeel and nutrition facts per serving. HD & B&Js Vanilla has about 21g of fat per serving, and ours is ~19g. We tried to choose the overrun that matched the optimal mouthfeel given our mix. This overrun is going to be higher than HD & B&Js because our butterfat is higher.

We always fill our pints to the brim. We have machines that will reject pints that are underweight at a certain threshold. However, if pints overthaw and refreeze, there will be shrinkage, where air escapes. The same amount of ice cream and calories are in there, but it's slightly more dense. Fluid ounces is a measure of volume, not weight. These are absolutely a full 16 FLUID ounces, but not 16 ounces since air is added to ice cream (no ice cream is 16 ounces). All ice creams will have different weights depending on overrun, the weight of the mix, and the number of inclusions. These will weigh less than HD and B&Js, again, due to more overrun required for improved mouthfeel and texture. As you know, low carb ice cream (especially ice cream that is only has just 0-2g of sugar per pint like our flavors do) is extremely sensitive to shrinkage, more so than traditional ice cream due to the lack of sugar. It's less of a problem with repeated, normal thawing as you experienced, but it can still happen. You won't notice it much with most flavors, but the fruity flavors are most susceptible to it because they have less fat and less solids and more water. They have fruity purees mixed in with the ice cream base. The fruity flavors are very sensitive, something which is extremely hard to fix. We could abandon using fruit entirely and use flavoring only (like we do with our orange cream - which we chose because oranges would be too high in sugar)... this would improve cost and stability, but it isn't authentic and will never be as good of flavor. These are the tradeoffs and considerations we have, and please feel free to share your additional thoughts as well! Thank you!
